We had a surprise visit by my father in law the other day. He is the patriarch of the family so whenever he decides to drop by any of his children’s house, it means that he is up to something important. Even though we were all very glad to see him, my head had this mental checklist in the kitchen to see what I can cook for him. And since he is one of my favorite people in the world, I wanted to serve him the best dish. I am glad that I was able to get the Blue Stilton the day before.

 It is known that smoked salmon and Stilton Cheese are a familiar sight on the English table. Both have this stylish presence and a flavor that is complemented with horseradish. Most English dinners have this recipe as a starter or a light main course. I know that my father in law deservers a royal dish and a royal treatment as well. The Ingredients for this recipe:

75g/3 oz Stilton cheese, rind removed and crumbled

6 tbsp red lentils

1 stalk celery, finely chopped

200g/7 oz smoked salmon

110g/4 oz light cream cheese

1 tbsp creamed horseradish

2 tbsp milk

350g/12 oz new potatoes

110g/4 oz baby sweet corn

1 bag mixed green salad

You will need the following for the dressing

5 tbsp rapeseed oil or vegetable oil

1 tsp grainy mustard

2 tsp lemon juice

To Finish:

8 chives

Cooking Directions:

1. First, you have to line the insides of four tea cups with clear plastic wrap, and then line each cup up the side with smoked salmon Leave it aside.

2.To be able to come up with a good filling, cover the lentils with boiling water and simmer for 10 minutes until soft.  You may then cool under running water, drain and place in a bowl with the celery, Stilton, cream cheese and horseradish.

3. Start putting together all the ingredients keeping in mind to adjust the consistency of the milk. Fill the lined tea cups and refrigerate while you cook the new potatoes and warm the sweet corn.

4. Turn the smoked salmon timbales out onto four large plates, scatter the salad all around, then place the still warm potatoes and sweet corn randomly through the salad.

5. To finish, combine dressing ingredients and trickle over the leaves. Top each timbale with 2 chives and freshly ground black pepper to taste.

Crab Puffs

A lot of my family and friends choose this as the most delicious appetizer to date. Shallots, Blue Stilton Cheese, lemon zest, lump crab meat, eggs, fresh bread crumbs spiced with pepper and garnished with parsley leaves will make this amazing delectable crab puffs. This is the most unique way to serve crab. Your family and friends will be wanting for more.

Last week, in UEFA Champions league, FC Bayern fans have plenty to celebrate. They were not only able to win against FC Manchester City but have made a significant statement of their quest for the title. Later in the evening, I saw Mario Gomez, who made two goals against Manchester City dining in one of the finest restaurants in the city. He ordered one of my favorite meals, the grilled steak with chips and Blue Stilton sauce.  A great steak recipe for dinner that is fit for champions.  

Steak and chips with excellent Stilton sauce makes any ordinary steak into something extraordinary and fantastic. True enough, I made my own version of the steak Mario Gomez was having that night. My own version of grilled steak and chips with stilton sauce wouldn’t look out of place in a restaurant.  

To make the Stilton Cheese sauce, here are the things you need. You shall need 4 large potatoes, 1-2 tablespoon of sunflower oil and ½ teaspoon paprika. You will also need lean sirloin or rump steaks. For your sauce, you need 200g of mushrooms, 6 tablespoon of reduced fat crème fraiche and 100g of blue stilton cheese that is crumbled. The first thing that you need to do is heat the oven to 200 to 400 F. You have to cut each potato into 8 wedges and place in roasting tin. Brush some oil and sprinkle with paprika. Bake in the oven for 30 min until the potatoes are soft on the inside and brown on the outside. Then you need to heat the remaining oil in a large non-stick frying pan and fry for 3 to 5mins on each side. When cooked, remove the steaks from the pan and keep warm. Add mushrooms to the pan and fry for 3 to 4 minutes then add the crème fraiche and stilton. Heat it in low fire for 1 minute. It time to serve this dish to your family and friends and see how they will love it.  

This is my very own version of the chips and steak with Blue Stilton Cheese sauce. Using the Stilton cheese made the sauce a lot creamier than the usual cheese. The by using Blue Stilton, it made the sauce extra creamy and special. This is a very strong blue cheese sauce that goes well on Sirloin or aged Angus Rib Eye steaks that have been crusted with pepper and grilled. You will be surprised at how flavorful and unique its taste is.
