One gloomy Monday morning, as I was sitting alone in the dining table, I suddenly had this strange urge to do something worthwhile for the entire week. The kitchen has always been my sister’s or my mother’s territory and I have never taken over it. However, today, I really want to learn how to cook the ones I love eating. I went straight to the computer to look for a Bufala Mozzarella dish because it is one of my favorite cheeses. Here’s what I found:
Twice Grilled Peppers with Buffalo Mozzarella and Caper-Basil Vinaigrette
The ingredients are as follows:
3 red bell peppers
3 yellow bell peppers
3 orange bell peppers
3 tablespoons olive oil
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
Italian or French bread , thinly sliced and grilled
1 pound Buffala Mozzarella Cheese, cut into 1/4-inch thick slices
Fresh basil leaves, for garnish
Here’s how simple it is to cook it:
- Have your grill on high mode. Then brush the bell peppers with 2 tablespoons of the oil and season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper; grill the peppers until charred on all sides. Set aside for ten minutes on a clean plastic wrap covered bowl. and then remove the skin from the peppers, brush them with the remaining oil and season with salt and pepper, and place back on the grill and cook until slightly charred on all sides.
- You can start slicing the peppers to fit the bread slices or you may do it in quarters. Place a slice of mozzarella over each pepper and drizzle with the Caper-Basil Vinaigrette. Serve immediately after garnishing it with fresh basil leaves.
For the Caper-Basil Vinaigrette
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup pure olive oil
2 tablespoons capers, drained
2 tablespoons chopped fresh basil leaves
Easy steps:
- Whisk together the vinegar, mustard, garlic, salt, and pepper in a medium bowl.
- Until it emulsifies, you can slowly whisk the oil. Put in the basil and capers.
I had no idea that my mom, dad, and my sister had been anxiously waiting for me to finish my dish. They ran straight to the kitchen the moment they saw me tasting my dish.
